- 1 lb skinned chicken breast.
- 1/3 slivered almonds
- 5 slices fresh ginger root
- 3 green onions, chopped to about 1 inch lengths
- 1 green pepper, chopped as above
- 1/2 cup diced bamboo shoots
- 1 cup vegtable oil
- for the marinade
- 1/4 tsp salt
- 1/8 tsp white pepper
- 1 tsp cornstarch
- 1 tbsp soy sauce
- 1 egg white
- for the seasoning sauce
- 1 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 tbsp dry sherry
- 1/2 tsp salt
- 1 tsp sugar
- 1/2 tsp cornstarch
To make the almond chicken recipe, we are firstly going to cut our chicken into 1 inch cubes. Next, we’ll combine the ingredients for the marinade, add the chicken and mix well. We will let this to stand for around half an hour.
Secondly, let’s heat some oil in our wok, add in the chicken and stir-fry it until browned. Then, we’ll remove the chicken and drain well. Stir-fry the ginger, onion, pepper and bamboo shoots for roughly a minute until all vegetables are crisp and tender.
Lastly, we are going to combine our ingredients for the seasoning sauce in a small bowl. We will mix this well and add to our wok and bring to the boil. Next, it’s time to add the chicken to the boiling sauce. Stir-fry the chicken until coated with sauce. Add almonds, mix well and serve hot to our guests.
