- 5 cup chicken stock, strained (fairly clear)
- 1 green onion
- 1/2 cup rice stick noodles, soaked
- 1/8 lb boneless pork butt
- 1 tsp thin soy sauce
- 4 black mushrooms
- 1 pinch sugar
- 1/3 cup dried bamboo shoot tips, soaked and shredded
- 2 tsp white vinegar
- 1/2 tsp sesame oil
To make Sour soup with rice noodles, we will first wash and soak the mushrooms in warm water for 30 minutes and then shred. Wash and soak dried bamboo shoots in warm water for 1 hour; shred in 1″ pieces. Slice Pork butt into 1″ matchsticks. Wash and trim green onion, shred on the bias into 1″ pieces. Next, soak the rice stick noodles in warm water until soft.
Cooking Soup
taking a sauce pan, heat the broth. Once it reaches a gentle boil, add the pork, mushrooms, bamboo shoots, soy sauce and sugar. Simmer for 10 minutes. Add the soaked rice stick noodles and simmer for another 10 minutes. A minute before removing from heat, add vinegar and sesame oil, stir.
Remove to a serving bowl and garnish with shredded green onions. Sour soup with rice noodles makes an ideal starter dish to any authentic Chinese meal.
