- 2 lb stewing lamb, cut in 1 1/4 inch cubes
- 1/2 tsp cayenne pepper
- 4 tbsp fresh lemon juice
- 1/4 tsp salt
- 3 garlic cloves, minced
- 1 pinch sugar
- 1 tbsp hot chili oil (or 1 tbsp salad oil)
To make some delicious and tasty barbecued lamb on skewers you should first of all combine all the ingredients together and marinate the lamb cubes for around 2 hours in covered bowl. once marinated, drain the lamb, reserving the marinade for basting during barbecuing.
Next we will skewer the lamb. You should have enough meat for two skewers per serving. Barbecue the lamb until browned, but still juicy. Overcooking the meat will dampen the flavours.
Once the lamb has been barbecued, serve with naan bread or shao bing (baked sesame rolls).
